If there is one thing I remember about Easter – other than the egg hunts – it would have to be breakfast. We would go to our grandparents house after they came home from church, and we'd all have a huge brunch together.

This is the ultimate before-or-after egg hunt breakfast! Have each person make their own, and everyone is happy. With lots of protein options to choose from, breakfast burritos are great for picky eaters. By making them “build-your-own” everyone can leave out the parts they don’t like. Scrambled eggs, sausage, and bacon are just the beginning! Try incorporating some spring-time staples and veggies as well! And, with very little actual cooking involved, the responsible grown-ups can easily prep these the night before and while the coffee is still brewing.

We couldn’t leave out scrambled eggs! This may be called mother's day scramble, but it's a great recipe to prepare with the kids. Depending on the age and kitchen skills of your child, it may require a little help from another adult for cooking and slicing, but, for the most part, the kiddos should be able to measure the ingredients, whisk the eggs, and chop the herbs (tip: use a clean pair of safety scissors instead of a knife).
